Sweet potato wedges

Pre-heat oven to 200

Wash but don't peel the sweet potatoes and cut into thick wedges.
Toss in olive oil and paprika (the smoky stuff if you have it), salt and pepper.
Tip into a roasting dish and roast for 10 minutes.
Turn the heat down to 160 and continue cooking until the skins are crispy and the flesh soft, like mashed potato, about 30-40 minutes.

We had them with some haddock goujons, home made tartare sauce and salad.

I'll try that, I love sweet potatoes. I sometimes pop some in with the roast potatoes on a Sunday.

If you leave them to cool for five minutes after they come out of the oven they go even crispier so eat at or around room temp.

200 or the equivalent for the first ten minutes and then 160 for the remaining 30-40 mins.

Instead of roasting these in the oven tonight I par boiled them (about 6-8 mins) , dried them off and rolled them in a Cajun spice mix, then put them in one of those wire racks and finished them off on the barbecue, about 10 minutes on a medium flame. Absolutely delicious with sour cream and lime wedges.

I have sweet potatoes a lot, ordinary spuds play havoc with my ticker (heavy on the carbs) so sweets are my choice.  Have to agree they are fantastic roasted in the oven, will have to try the paprika and also the barbecue Butts. Forum Index -> Plankton and Water
